Salmon nuggets with a mint & sage yogurt sauce

This is a super easy recipe from our The Chef’s Cut member Eric, who made it as a snack during the lockdown. Have a try yourself!

Ingredients

  • Fresh salmon
  • spring onion
  • parsley
  • bread crumbs
  • parmesan cheese
  • egg
  • salt & pepper
  • olive oil
  • yogurt
  • one lemon

Preparation

  1. Dice & chop the salmon (no food processor use)
  2. Chop the parsley & spring onions
  3. Place into a bowl and add the diced salmon
  4. Add a splash of olive oil, some salt, fresh herbs and the parmesan cheese
  5. Mix all together
  6. Dip into the egg, dip into the breadcrumbs
  7. Fry for 1 min each side.
  8. For the sauce; combine lemon juice, lemon zest, yogurt, chopped sage & mint into a bowl and add salt, pepper and olive oil
